Easy Banana Pancakes

With just three ingredients your kids can make you breakfast without a lot of mess!

Ingredients

  • 2 medium-to-large ripe bananas
  • 4 large eggs
  • ½ cup whole wheat flour
  • Optional ½ teaspoon ground cinnamon, 1 t vanilla
  • Butter or vegetable oil for cooking

Instructions

  1. In a medium mixing bowl, mash the banana with a large fork. Add the eggs and whisk until the eggs are incorporated
  2. Add the flour. Add any flavoring that you'd like. Gently stir until combined. Set aside.
  3. Heat a large skillet (stainless steel, cast iron or non-stick) over medium-low heat . You’re ready to start cooking once a drop of water sizzles on contact with the hot surface. Add butter or oil to ensure pancakes won't stick.
  4. Scoop ¼ cup batter onto the hot skillet, leaving a couple of inches around each pancake for expansion. Cook until small bubbles form on the surface of the pancakes, 2 to 3 minutes.
  5. Flip the pancakes, then cook until lightly golden on both sides, 1 to 2 minutes more. Repeat until all the batter is used.
  6. Serve immediately.
