Today, crepes are a symbol of French cuisine and are enjoyed by people from all walks of life. In recent years, the popularity of crepes has soared globally, with various countries putting their own unique spin on this versatile dish. From the savory galettes of Brittany to the sweet crepes found in countless creperies worldwide, the love for crepes knows no bounds. These delicate pancakes are made with a simple batter consisting of flour, eggs, milk, and a hint of sugar and salt. The batter is then spread thinly on a hot griddle or crepe pan and cooked until golden brown. French crepes can be served with a variety of fillings, ranging from sweet to savory, making them incredibly versatile. 

### 2. Galettes Galettes, a specialty of the Brittany region in France, are savory crepes made with buckwheat flour. Unlike their sweet counterparts, galettes have a heartier and nuttier flavor profile. Traditionally, galettes are filled with ingredients such as ham, cheese, and eggs, but the possibilities are endless. Galettes are often enjoyed as a main course and are a staple in Breton cuisine. 

### 3. American-style Crepes American-style crepes are slightly thicker and fluffier than their French counterparts. They are typically made with a batter similar to that of traditional pancakes, consisting of flour, eggs, milk, and baking powder. American-style crepes are often served with sweet fillings such as fruit compotes, whipped cream, or chocolate sauce. They are a popular choice for breakfast or brunch, offering a lighter alternative to traditional pancakes. 

Tips for Making Perfect Crepes Every Time 


Making crepes can be a delicate process, but with a few tips and tricks, you'll be able to achieve perfect crepes every time. Here are some pointers to help you master the art of crepe-making:
 ### 1. Resting the Batter Allowing the crepe batter to rest for at least 30 minutes before cooking allows the gluten in the flour to relax, resulting in a smoother batter and more tender crepes. Cover the batter and refrigerate it if resting for longer periods. 

### 2. The Right Pan Invest in a good-quality non-stick crepe pan or skillet for the best results. A pan with a low rim and a wide, flat surface makes it easier to spread the batter evenly and flip the crepes without breaking them. 

### 3. Proper Heat Ensure that the pan is preheated over medium heat before adding the batter. This allows the crepes to cook evenly and develop a golden-brown color. Adjust the heat as needed to prevent burning or undercooking. 

### 4. Thin and Even Coating When pouring the batter onto the pan, quickly swirl it around to coat the bottom evenly. Aim for a thin layer of batter to achieve the desired delicate texture of the crepes. If the batter is too thick, add a little more milk to thin it out. 

### 5. Flipping Techniques To flip the crepes, use a thin spatula or an offset spatula. Gently loosen the edges of the crepe, then quickly and confidently flip it over. 

### 6. And my personal favorite:  use the premade crepes from Melissa's Produce.  They are absolutely delicious and make everything so much easier.  

Practice makes perfect, so don't be discouraged if the first few flips are not as seamless as you'd like.
