Welcome to Christmas Cookies Week 2023! Each year this event provides me enough cookie recipes for the entire year! Thank you to Jolene's Recipe Journal for hosting us this year.
When developing these cookies, I had in mind a quick cookie that my husband would want to share with his bourbon buddies. I wanted a festive cookie, which the bourbon helps with, but I wanted a cookie that I would make for other times of the year as well. These cookies fit the bill nicely.
These cookies retain their bourbon flavor. Many cookies I have made have had the alcohol cooked out and what is left is very little flavor. These cookies have a distinct bourbon flavor that is delicious with hints of brown sugar.
Using a sugar cookie dough mix helps make this a quick cookie to make, and the small package of mix makes 24 cookies. If you want to make more, use a large mix package, and increase the bourbon to 3 tablespoons.

Bourbon Toffee Cookies
Ingredients
- 1 pkg sugar cookie mix
- 1 stick softened butter
- 1/2 cup chopped pecans
- 1/2 cup toffee pieces
- 1 egg
- 2 T Kentucky bourbon
Instructions
- Preheat oven to 350 degrees F.
- Pour sugar cookie mix, egg, and bourbon into a mixing bowl and beat for one minute or egg is incorporated.
- Add in pecans and toffee.
- Scoop into 1" balls and place on a cookie sheet.
- Bake 10 minutes.
- Let cool for 2 minutes on cookie sheet then transfer to a cooling rack.
- Cool thoroughly before packing.
I have friends who are bourbon drinkers. These will make a nice host gift for them.
