October is National Cookbook Month and my friends at #SundayFunday are all writing about their favorite cookbooks and sharing recipes that were inspired by them. Our host is Culinary Cam and I thank her for organizing this delightful event.
Weekend Camping Cookbook
My Favorite Cookbooks
I adore cookbooks and have a bookshelf dedicated to my all-time favorites. At the top of my favorites list are two genres: Camping Cookbooks and Christmas Cookbooks. Both sing to me! I just purchased a new camper this week and my husband is building me a little bookshelf to put my cookbooks. I will love having them in my camper, ready to cook up a fun and hearty meal.
The Weekend Camping Cookbook (Amazon affiliate link, if you click and purchase I get a small commission) is published by Fox Chapel Publishing. I saw it at a gift shop and knew I wanted it as the recipes are simple yet look amazing. There are over 100 recipes for the campfire, grilling, and cooking indoors. There is a chapter on s'mores and several recipes using pie irons.
Recipes from Weekend Camping Cookbook
There are several wonderful-sounding recipes that I have bookmarked. For Breakfast there are Cheesy Bacon Buns and Strawberry Frencies, for One Dish Mains I found Canine Kraut Hot Dogs and Sausage Pizza on a Stick, and for Desserts and S'mores, I found S'more Burritos and Bacon S'mores. You know I have to try that one!
One recipe under One Dish Mains is Skillet Enchiladas. We make a similar recipe, so I am sharing mine. If you want to see what's in the cookbook, I suggest purchasing it above!

What a fun cookbook! That skillet looks delicious. While I'm not one for camping, I'm sure it's just as delish at home!
ReplyDeleteLove this skillet enchiladas recipe. Quick, easy and doable not only when camping but at home too for quick meals.
