Smoked Baked Beans with Jalapenos and Bacon #HolidaySideDishes

My family adores baked beans, and when my husband puts them on the smoker, you'd think the heavens broke open and multitudes of angels started singing...





That's pretty close to accurate, though, as everyone claps and hollers and makes a huge line out the garden gate.  They are that good.  However, the recipe is mine and his 30 minutes of smoking only enhances what I have put into the pot. Deliciousness of beans, bacon, and jalapeno peppers.  Come to momma!





Some of our tips over the years:

We love a certain brand of beans, but since it is a brand name, I'll just say to not skimp on this part of the recipe.

We grow our own peppers and feel that it makes a big difference in the overall taste of the dish.

We like pecan wood, but some of our family prefers apple or cherry wood smoke.

Smoked Baked Beans with Bacon and Jalapeno Peppers

These baked beans have so many levels of flavors: bacon, smoky goodness of pecan wood, and jalapeno peppers.

Ingredients

  • 2 large jalapenos, seeds and membranes removed, diced
  • 1 yellow onion, diced
  • 4 strips of bacon, cooked and chopped
  • 2 cans baked beans
  • 1/2 c brown sugar
  • salt and pepper
  • 1 teaspoon prepared mustard

Instructions

  1. Prepare smoker by bringing it to 300 degrees. Soak your pecan wood chunks.
  2. Reduce to 225.
  3. Fry bacon in a cast iron skillet.
  4. Add in onion and jalapeno and cook until onion is translucent.
  5. Stir in baked beans and bring to a bubble.
  6. Add in mustard and brown sugar, stir well.
  7. Pour into an aluminum pan, 8 by 8".
  8. Place beans into smoker and smoke for 20 minutes.
  9. Let beans rest for 10 minutes before serving.
