Smoked Mac and Cheese #HolidaySideDishes

It is the annual Holiday Side Dish Week, the 2022 version, and I am happy to share with you my husband's Smoked Mac and Cheese that goes beautifully with many different proteins, such as roast turkey, deep-fried turkey, baked ham, roast beef, roasted chicken and so much more! 





This mac and cheese are served in an aluminum pie pan for our outdoor fun, but for other prime events, like Thanksgiving,  consider serving it in the family's cast iron skillet. You can smoke the dish in this container and a bit of smoky goodness scents the air around the table. 





Oh. So. Good!

Smoked Mac and Cheese

This smoked mac and cheese was made so easy by adding smoke using the Big Green Egg.

Ingredients

  • 16 oz of your favorite dried pasta
  • 3/4 c heavy cream
  • 1/2 c half and half
  • salt and pepper
  • 4 Tablespoons butter
  • 1 1/2 c shredded swiss cheese
  • 1 1/2 c shredded gouda cheese

Instructions

  1. Preheat the smoker to 300, reduce to 225 degrees, add your soaked wood (we like apple, cherry or pecan) and set the smoker to smoke.
  2. Boil the noodles in salted water until al dente.
  3. Drain the noodles, add cream, butter, half and half, cheese, salt and pepper to taste and stir until cheese has melted. Cover with a sheet of nonstick aluminum foil.
  4. Smoke for 15 minutes, then peel the foil back from one corner and smoke another 15 minutes.
  5. Remove from smoker, reseal the foil and set for 10 minutes. Serve.

    Yum, grown up mac n cheese! I just bought a stove top smoker and bet this could be adapted for that.
