I participate in a great group called Movies and Munchies that watches movies and makes a dish inspired by the movie. This month we watched Encanto, one of the latest Disney movies featuring an amazing soundtrack and a setting in Colombia, South America. What's not to love! Thank you to Amy at Amy's Cooking Adventures for suggesting this film this month.
Have you seen this delightful film? Encanto is about the Madrigal family and their tradition of sharing their magical gifts to give back to their community. It features the lovely country of Colombia with glimpses of their culture through music, dance, clothing, and of course, food.
One of the food references in this film is arepas con queso. The arepas make plenty of appearances in the movie, and mostly as a way to show love to one's family. There is a scene where the mother pats out an arepa, which is what I watched to make mine.
An area is a cornmeal type of biscuit that is grilled and served with all kinds of fillings. It reminds me of an English muffin, but more hollow. I made a breakfast area and it was delicious!
Encanto has to be one of the cutest Disney movies ever created! We sing their songs all the time! We will do this recipe the next time we watch it!
