Irish Nachos

 St. Patrick's Day is right around the corner and we like to celebrate with a few fun Irish-inspired foods, like these delicious Irish Nachos.  This recipe reminds me of a pub-style app that is made with thinly sliced potatoes, but we love making ours with frozen french fries.




Typically Irish Nachos are made with the same toppings that regular nachos come with.  We like to use shredded sharp cheddar, bacon, green onion, and sour cream, which reminds me more of what goes on a twice-baked potato.  The best part is you can make these babies however YOU like!




Irish nachos were created in the 1980s by Randy Ford, the owner of J. Gilligan's restaurant (Arlington) where he claims his invention was "the luck of the Irish."  I think we were the lucky ones, Randy Ford!

Irish Nachos

Just like the delicious pub-style Irish nachos served in your favorite bar!

Ingredients

  • 32 oz bag frozen french fries
  • 4 slices bacon, cooked and chopped
  • 2 green onions, sliced, including the green tops
  • 1/2 c sour cream
  • 3 cups shredded sharp cheddar cheese

Instructions

  1. Bake french fries according to package directions.
  2. Remove from oven and sprinkle on cheese over the top.
  3. Add chopped bacon.
  4. Melt cheese in oven until cheese is bubbling.
  5. Remove from oven, sprinkle on green onion.
  6. Serve with a dollop of sour cream.

Notes

Fries can also be made in the air fryer. See package directions for how to cook in an air fryer.

  4. Oh my, love this recipe. When I read nachos as the title, thought they were the Tex Mex type nachos. What a pleasant surprise that it has fries topped with cheese and onions. Definitely going to make these Irish Nachos.

  5. This recipe is similar to something I make which I call "fully loaded mashed potatoes." I am going to try your nacho recipe using french fries. It sure looks perfect to snack on during our family movie nights.
