Souper Bowl Chili

 Who's ready for some football??  Even though I am a Missouri girl, my Packers aren't playing in the big show, nor are my dad's favorite team, the Kansas City Chiefs.  We will watch the game, though, as we love football and I especially love the halftime shows, being a former twirler!

Chili is a common choice for Game Day, but we decided to make this one as it is a healthier version of our traditional chili.  My husband loves to make it and I actually love the additional vegetables.

Souper Bowl Chili

This is a healthier version of our normal chili.

Ingredients

  • 1 T extra virgin olive oil
  • 1/2 large white onion, chopped
  • 3 garlic cloves, minced
  • 1 T tomato paste
  • 1- 1 1/2 lbs of lean ground beef
  • 2 t chili powder
  • 1 t ground cumin
  • 1 t dried oregano
  • 1 t paprika
  • 1/2 -1 t cayenne pepper
  • salt and pepper
  • 2-3 chipotle peppers in adobo sauce
  • 2 bell peppers chopped (we like one of them to be red)
  • 3 c chicken or vegetable stock
  • 1 15 oz can of mild chili beans
  • 1 15 oz can black beans, rinsed
  • 1 28 oz can crushed tomatoes
  • Garnish ideas
  • cilantro
  • shredded cheddar cheese
  • chopped green onion
  • sour cream

Instructions

  1. Heat the oil in a large dutch oven. Add the onion, cook until soft and transparent, around 5 minutes.
  2. Stir in the garlic, cook for a minute, and then add tomato paste.
  3. Add in ground beef and cook, breaking up the meat into smaller pieces, until no pink shows. Drain the fat, and return the pot to the heat.
  4. Add in all the spices plus salt and pepper.
  5. Cook for about 2 minutes to give the spices time to fully develop. Add in the bell peppers, beans, tomatoes, chipotle peppers, broth, and bring to a boil.
  6. Reduce heat and simmer 20 minutes. Add water if you like a thinner chili and salt and pepper if needed.
  7. Serve the chili in bowls and garnish as you see fit.

    2. I reckon to make a great chilli. And my ingredients are so similar to your own in quantity except for two cans of kidney beans. Oh and I like to cook that beef until it is quite mushy and then leave the whole thing overnight to mature!
