National Pancake Week is February 27-March 5 this year and I wanted you to have some wonderful pancake ideas to try. You will not be disappointed with the list that I am sharing below!
National Pancake Week as a holiday didn't begin all that long ago. In 1989, the holiday was designated to start 49 days before Easter. Shrove Tuesday, the day before Ash Wednesday which is the first official day of Lent, is a perfect and traditional time to enjoy pancakes. In our house, that means traditional pancakes served with a wedge of cheddar cheese. What traditions do you have at your house?

25 MinCinnamon Roll Pancakes
These delicious pancakes taste like warm cinnamon rolls with cream cheese frosting!
Ingredients
For the pancakes
- 2 c complete pancake mix
- 2 c water
For the cinnamon topping
- 1/2 c butter
- 1/2 c brown sugar
- 1 T cinnamon
For the cream cheese frosting
- 4 oz softened cream cheese
- 1/2 c prepared vanilla frosting
Other ingredients
- 3-4 T vegetable oil for griddle
Instructions
- Melt butter in a small saucepan and add cinnamon and brown sugar.
- Cook for 1 minute, then set aside.
- Combine softened cream cheese and prepared vanilla icing. Mix thoroughly, set aside.
- Prepare pancake batter according to package directions.
- Preheat griddle to medium-high.
- Grease the griddle with vegetable oil.
- Ladle pancake batter on the griddle. Let cook for 2-3 minutes.
- Sprinkle the cinnamon topping on the pancakes and cook another 2-3 minutes.
- Flip pancake. Let cook until sugar caramelizes.
- Remove pancakes from the griddle.
- Using the icing, drizzle the icing in a cinnamon roll spiral.
- Serve warm.
Notes
Place cream cheese icing into a ziplock bag. Snip a corner and squeeze icing onto pancakes. It is very easy to control.
