When I think of salad, it's a really nice feeling for me. I think of the side salads my mother-in-law Irene used to make on Sunday steak nights. Serious, they were a meal in itself. Crisp greens, eggs, croutons, onion, olives, and a French Bleu Cheese dressing that we all loved. Now I think of hearty salads that can serve as a meal, without thinking of "sides."
Because Irene's salads really were always the star of the show!

Spinach Salad with Creamy Hard Boiled Egg
We topped our salad with a light lemon dressing made like this: 1/2 c olive oil, 1/4 c lemon flavored olive oil, salt and pepper, 1 t lemon juice, 1 T dijon mustard. These dressing ingredients make a REALLY nice topping for the salad. Then mix this thoroughly and add to the salad at the last minute. Afterwards, you need to toss to coat.
What To Serve With Spinach Salad?
Grilled Chicken Breast with Rice: This is a super simple meal. The grilled chicken pairs perfectly with the flavors of the spinach salad, and a side of rice adds a nice heartiness to the meal.
Seared Salmon with Roasted Vegetables: The yummy taste of salmon pairs really well with the lightness of spinach. A nice side of roasted vegetables (like carrots, zucchini, or Brussels sprouts) makes for a fulfilling meal.
Steak with Mashed Potatoes: If you're craving something a bit more indulgent, a juicy steak with creamy mashed potatoes is the perfect combination with a refreshing spinach salad.
Garlic Shrimp with Couscous: This is such a light, summery meal! I love shrimp with a side of couscous, because it provides the perfect balance with the spinach salad.
Grilled Mushrooms with Polenta: For a suitable vegetarian option, grilled mushrooms are both yummy and satisfying, while the polenta just adds a little bit of extra something.
Chicken or Veggie Tacos: If you're in the mood for something with a bit of spice, tacos with grilled chicken or roasted veggies make the perfect match for this salad.
Pasta Primavera: A delicious pasta dish with veggies in a garlic and olive oil sauce makes a perfect match to the fresh greens of a spinach salad. You get your hearty meal but also something fresh on the side for a well-balanced meal.
Steak and Fries: If you're looking for something more indulgent, a perfectly cooked steak with crispy homemade fries pairs beautifully with the freshness of the spinach salad.
Vegetarian Buddha Bowl: A nourishing bowl filled with quinoa, roasted vegetables, avocado, and a tangy dressing pairs so nicely with a simple spinach salad for a plant-based meal. Or, if you like this idea but aren't vegetarian, you can cook the bacon to crumble on top of the bowl. Spinach salad with bacon is seriously good.

ReplyDeleteWhenever I serve a spinach salad, I like to use citrus in the dressing so your lemon one would be ideal, Terri. I remember reading a long, long time ago that the citrus increases our absorption of iron from the greens. Plus it's just downright tasty!
