It's Slow Cooker Month and my friends and I have banded together to present to you recipes using your slow cooker. It is such a time saver for you and your family, and, the meals are delicious too. I am sharing a recipe for Slow Cooker Poached Salmon that has an incredible lemon sauce on it.
Using the slow cooker with salmon does a couple of things: 1. it slows down the cooking process so that the meat is tender and 2. the liquids ensure that the meat is juicy and delicious. These reasons alone would be enough for me to use the slow cooker with salmon but there are many other reasons to use the slow cooker.
You can use the leftovers to make an incredible salad or freeze for future meals. So when you cook a salmon, cook the entire filet. This is also the most inexpensive way to purchase salmon, versus the individually packed portions. You can refrigerate cooked salmon in airtight containers for up to four days. You can freeze cooked portions by cooking them down completely and then storing them in a vacuum-sealed container or freezer bags.

2 H & 25 MSlow Cooker Poached Salmon with Lemons and Capers
Ingredients
The Salmon Prep
- 1 lemon cut into 1/4" slices
- 1.5 to 2 pounds skin-on salmon fillet
- cooking spray
- salt and fresh ground pepper, to taste
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon Italian Seasoning
- 1 cup low-sodium vegetable broth
- juice of 1 lemon
Lemon Sauce (optional)
- 3 tablespoons lemon/stock juice from the slow cooker
- 1/4 cup white wine
- 2/3 cup heavy cream
- 1 T capers
- 1/8 teaspoon lemon zest
- chopped fresh parsley, for garnish
Instructions
- Line slow cooker with a large piece of parchment paper.
- Slice one lemon into 1/4" slices and arrange slices down the middle of the slow cooker.
- Place salmon on top of lemon slices and spray salmon with cooking spray.
- Blend salt, pepper, paprika, chili powder, garlic granules, and Italian Seasoning. Rub the seasoning all over the salmon. Top with capers.
- Pour broth and lemon juice into the slow cooker but avoid pouring it over the top of the fish, about halfway up the sides of the fish. Keep the spices on the fish on the fish!
- Cook on LOW for 2 hours, or until opaque and flaky.
- Preheat oven to 400F.
- Using the parchment paper, carefully lift out the fish and lay it on a baking sheet. Bake for 5-6 minutes.
- Remove from oven and let rest. Slice the salmon into serving-sized pieces.
- FOR THE CREAMY LEMON SAUCE
- Stir in lemon juice, broth, and cream in a medium-sized pot over medium-high heat.
- Bring to a simmer.
- Set heat to LOW; cover the pot and cook for 8 minutes.
- Uncover; stir in lemon zest, set heat to high, and cook for 2 more minutes. The sauce should thicken a bit.
- Remove from heat.
- Cut up the salmon into individual fillets.
- Pour sauce over the fillets and garnish with parsley. Sauce is a thinner sauce.
- Serve with lemon wedges.
Notes
Parchment paper makes lifting the fish out of the slow cooker easy!
