Spinach Ravioli with Pan Fried Scallops for Christmas (or any time!)

This lovely pasta dish is perfect for Christmas.  It's quick to make and absolutely gorgeous in the bowl.  Cook as much pasta as you will need, about half a pound of pasta for every three people and this will become a holiday tradition before your very eyes!  It's lovely with a simple salad and a beautiful loaf of crusty Italian bread!


It's also an elegant New Year's Eve dinner, for a cozy night in, or four a nice party of four.  When I think of pasta, I think of weeknights filled with kid activities, a quick bowl of pasta, and off we go!  This dish, while designed to be quick and easy, makes you want to slow down and be at peace with those who partake with you.

Spinach Ravioli and Pan Fried Scallops

So pretty and elegant, perfect for any holiday!

Ingredients

  • 1 pound of frozen scallops
  • 1 pound of frozen spinach ravioli
  • 4 tablespoons of good butter
  • 4 tablespoons of minced garlic
  • a grinding of red pepper flakes
  • 1/4 cup of grated parmesan cheese
  • 2 tablespoons parmesan flakes

Instructions

  1. Thaw scallops.
  2. Prepare pasta according to package directions. Save pasta water.
  3. Melt butter in a frying pan.
  4. Add garlic and saute until golden brown.
  5. Add scallops and cook until seared on one side, flip and cook briefly on the other side.
  6. Add in grated cheese and stir, add in 1/2 cup of pasta water.
  7. Add in ravioli and cook for two minutes.
  8. Plate into four pasta bowls.
  9. Top with shaved parmesan flakes.
