Pasta Fagioli is properly named pasta e Fagioli in Italian. It means "pasta with beans." It's loaded with rich ground beef, fresh vegetables, beans, and pasta, along with herbs and a savory broth. I recently served this dish with my Italian Beer Bread for a cookie swap for friends and they all told me it was delicious. This dish is traditionally made in a much longer, stew-like fashion, but I am sharing with you my 30 minute version.
I consider this a comfort food. It's a soup that can be a weekday meal or part of a nice luncheon for friends. I started making this soup about 15 years ago and everyone in the family loves it. The best part: you can make this all in one pot and under 30 minutes!

Ingredients
- 1 T good olive oil
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 1 large carrot, sliced into quarter inch circles
- 2 cloves of garlic, minced
- 1 15 oz can of diced Italian tomatoes
- 1/4 c dry shell pasta (whatever you have on hand)
- 4 c chicken broth or 2 c chicken broth and 2 c bean broth
- 1 15 oz can cannellini or Fagioli beans, drained and rinsed
- 3 T Parmesan cheese, grated
- 1 T Italian seasoning
- 1/4 t red pepper flakes
- fresh basil
- Pepper to taste
Instructions
- Cook carrot, celery, and onion in olive oil until vegetables are fork-tender.
- Stir in garlic, Italian seasoning, and red pepper flakes.
- Cook for 5 minutes stirring often. Add hamburger and tomatoes. Cook for 10 minutes.
- Add the rest of the ingredients, except for beans.
- Cook until pasta is tender.
- Add beans and heat thoroughly.
- Ladle into serving bowls and sprinkle with Parmesan cheese and basil before serving.
