I made this super cute gingerbread small bite cup hanger cookies.  They look adorable hanging from the rim of your cup and you can nibble it all up in one or two small bites at the end.  The trick is a cute cookie cutter I got from Amazon.  I have linked to it in the recipe.  I am an Amazon Affiliate, so I will make a small commission if you purchase it from me.

Easy Gingerbread Cup Hanger Cookies

This cookie lives up to its name by using a gingerbread cookie mix as the base for this cookie. Spend your time decorating and eating!

Ingredients

  • 1 17.5 ounce package of gingerbread cookie mix
  • 1 room temperature egg
  • 3 Tablespoons butter, melted
  • 1 small tub prepared icing, vanilla
  • mug hanger cookie cutters

Instructions

  1. Preheat the oven to 375 or to the package directions.
  2. Make the cookies to package directions, using the egg and butter.
  3. Mix until the dough binds into a ball.
  4. Refrigerate for 10 minutes.
  5. Roll dough on a lightly floured surface until 1/4 inch thick.
  6. Using cookie cutters, cut out cookies and place them on an ungreased cookie sheet. Make sure the slots that slide onto the sides of the mug are spread apart.
  7. Bake. Cool completely.
  8. Microwave the icing until softened but not completely melted. Pour into a piping bag fitted with a round tip #3. Let cool slightly, then pipe on designs. Let dry completely.

Notes:

Make sure all the foil top is removed from the icing container before you microwave it. Better yet, scoop the icing out into a small bowl and then microwave it in 10 second intervals.
