I love a good cheeseball. My mother-in-law rocked the cheeseball. She made a pimento cheese one at Christmastime that was covered in finely chopped walnuts (walnuts my father-in-law gathered, husked and picked himself!) and served with Ritz crackers that I couldn't get enough of. I believe that these mini, one-serving cheeseballs would have been a hit at her house!
This mini cheeseball has all the things my husband loves, cream cheese, bleu cheese, and bacon. One cheeseball is enough cheeseball for about three Ritz crackers. I love it because it looks nice all evening, but of course, they don't last that long!
I am giving you three different options for rolling the cheeseball, even though the basic cheeseball is the same for all of these. It gives you three different options for your guests but you can just roll them all in the same coating. Just allow for more coating toppings in the recipe.
Mini Cheeseball Truffles
Ingredients
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup (4 ounces) crumbled blue cheese
- 1/2 cup finely chopped, cooked bacon
- 2/3 cup chopped slivered almonds
- Garnish: 1/2 cup slivered almonds, chopped and 1/2 cup bacon, chopped, 2 tablespoons "Everything but the Bagel Seasoning."
Instructions
- In a medium bowl, add the cream cheese, blue cheese, bacon, and slivered almonds.
- Mix with a hand mixer until well blended.
- Form the mixture into 1 1/2-inch balls.
- Roll each ball in the slivered almonds, chopped bacon or Everything but the Bagel Seasoning to coat.
- Refrigerator for one hour before serving.

I love these little individual cheese balls. What a wonderful idea. I can make some with blue cheese, which I love and some with another cheese for my husband and guests who are not blue cheese lovers. PERFECT
