Lemon Loaf for Gift Giving #TasteCreations

 Do you love gifting food to your friends? I sure do, and many of them expect it from me, especially for the holidays. Here are four fabulous breads to give as gifts to well-deserving friends and neighbors.

My preferred choice is to give a whole loaf to a family.  I make the bread in give-away pans and wrap them in a pretty dish towel. The wrapping and the bread become the gift, instead of having a lot of throw-away trash.  



This lemon loaf reminds me of the one from Starbucks. It is as rich and has the flavor profile of the Starbucks loaf. What I found makes the difference is using lemon extract instead of lemon juice. Lemon juice is too tart and actually just too light to make a big difference in the taste. Using lemon juice in the glaze if you wish works just fine.




I like to give using these loaf pans. They can be thrown away, which means no one has to return them to you, nor does your recipient have to keep a pan they may not want.  These are sturdy and work well.



I also like to wrap up the breads in these gift towels. A kitchen towel, especially one as nice as this one, is always a welcomed gift. The color is neutral which means that it will work in anyone's kitchen.  I spread the towel out, place the bread in the center, draw the corners up and then tie them with a ribbon. Easy peasy.  The white towel is perfect for any type of ribbon.  And at less than $2 each, makes an affordable wrap.

Lemon Loaf

This delicious lemon loaf makes a wonderful gift for the holidays and for potluck suppers.

Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup (8 ounces) sour cream or Greek yogurt (lite okay)
  • 1/2 cup canola or vegetable oil
  • 2 tablespoons lemon zest
  • 1 to 2 tablespoons lemon extract, to taste (not teaspoons)*
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt, or to taste

Instructions

  1. Preheat oven to 350F. Grease and flour the loaf pan; set aside.
  2. To a large bowl, add the eggs, sugar, sour cream, and whisk vigorously until smooth and combined.
  3. Drizzle in the oil while whisking to combine.
  4. Add the lemon zest, lemon extract, and whisk to combine. Do not use lemon juice as it doesn't have the flavor profile you need for this loaf.
  5. Add the flour, baking powder, salt, and stir until just combined, don’t overmix. Some lumps will be present, don’t try to stir them smooth.
  6. Turn the batter out into the prepared pan.
  7. Bake for about 50 minutes, or until the top is set, and a toothpick inserted in the center crack comes out clean. In the last 10 minutes of baking, loosely drape a sheet of foil over the pan to keep from overbaking.
  8. Allow loaf to cool in pan on top of a wire rack for at least 30 minutes

Notes:

You can glaze this loaf with 1 cup of powdered sugar mixed with 3 tablespoons of milk or water or lemon juice.

  14. That looks amazing! It is nice to make a flavor that is something a little different and not just the usual chocolate, vanilla etc. The frosting and rind on top is a nice finishing touch as well.
