The Farmers Markets are in full swing here in Missouri and one of the favorite things to buy right now is sweet corn. You can make sweet corn so many ways and here are some of my favorites: Hot Honey Skillet Corn and Mexican Street Corn. One of my most popular posts here is my Crock Pot Corn on the Cob. This month the Taste Creation bloggers are serving you up fresh offerings straight from the Farmers Market!
Fresh sweet corn is such an easy addition to a summer salad. It really doesn't matter if you buy white or yellow because both are so very good! It is delicious grilled on the BBQ when the kernels get a bit of char, but sometimes you just don't want to fight the heat. To switch up the flavorings, play with flavored butter. In this dish, you combine garlic, herbs, and salt and pepper to get a delicious spread to use during cooking and afterward, too. If there are any leftovers, you can easily remove the corn from the cob and use it in salads.
I am really fortunate to have this sweet little market spot right here in my neighborhood. It is on the honor system and you just go in and pick out what you need and leave the money in the fridge. It's a fast way to get fresh vegetables on the table!

Oven Roasted Corn on the Cob
Ingredients
- 4 ears of corn, cleaned
- 1/4 cup of butter, softened
- 1 tablespoon minced garlic
- 1 tablespoon minced parsley
- 1 teaspoon minced rosemary
- 1 teaspoon salt
- black pepper to taste
Instructions
- Preheat oven to 425.
- Mix butter with all the seasonings and herbs.
- Coat each ear of corn with 1 tablespoon of the butter.
- Wrap each ear in aluminum foil and place on a cookie sheet or pan.
- Roast for 20-25 minutes, turning over once at the 10 minute mark.
- Remove corn from foil and serve with remaining butter.
Oh yes, my family would love this. We are all about corn. I've never tried to oven roast it before.
