The Farmers Market is one of our favorite places to go and this summer we have enjoyed it even more! There has been an abundance of fresh vegetables, especially zucchini and one of our favorite ways to enjoy it is this simple recipe for Air Fried Zucchini.
Zucchini has a lot of moisture in it, so it's important to keep that in mind when you decide how crispy you want it to be. For us, we don't mind it being a bit soft, we just want it to hold its shape so we can dip the sticks in our favorite avocado ranch dressing. If you like it crispier, you will want to cut the zucchini into smaller pieces, like rounds.
This is an excellent side dish or served as an appetizer. In fact, I first made this dish in a deep fryer trying to mimic the taste of my favorite fried zucchini at Madison's Restaurant in Jefferson City. Later I switched it up to an air fryer to reduce the amount of fat. That's how this recipe came to be.
I suggest the freshest zucchini for this dish. The water in the vegetable is minimal and it makes the best air-fried zucchini. Look for zucchini that weigh about half a pound each, that are dark green in color.
Some of my favorite tips
- Preheat the air fryer.
- Use the freshest zucchini you can.
- Look for uniform sizes if you are making multiple batches
- Try different seasoning combinations. We love using a taco seasoning!
- Don't crowd the air-fryer.
- Eat them right away.

Air Fried Zucchini
Ingredients
- 1 lb fresh zucchini
- 2 tablespoons parmesan cheese
- 2 tablespoons almond flour or panko bread crumbs
- 1 tablespoon olive oil or olive oil cooking spray
- 1 teaspoon
Instructions
- Preheat air fryer to 400.
- While heating, prepare zucchini into 2" sticks.
- Toss all ingredients in a bowl.
- Place into airfryer basket in a single layer. Work in batches if they don't all fit. Leave a bit of space between each stick to cook thoroughly.
- Cook 6-7 minutes or until coating is crispy.
Notes:
Zucchini can be cut into "chips" and fried the same way, however, start checking if it is done at 4 minutes.
