One of my childhood memories is of my mom making poke cake. If you are not familiar with a poke cake, it is a cake typically made in a rectangular pan, poked with holes made from a round wooden spoon, with jello poured into the holes and left to firm up. My mom's first one was a white cake with strawberry jello. She topped it with Cool Whip and we loved it. After that, she experimented with different combinations of flavors and we loved them all. It is in this experimental light that I made this Strawberry Peach Poke Cake.
I replaced the water in the cake mix with peach juice when I made the batter. Then I decided to bake it in a springform pan instead of the traditional 9 by 13 rectangular pan. I wanted to get the height of a two-layer cake without making two layers. Using the springform pan made the process easy! I used butter to grease the pan since the nonstick spray isn't recommended.
I received a new springform pan from the people at Circulon. This is a 9" pan that is oven safe up to 500 degrees. The release on the pan was super easy and it was so easy to clean since it is nonstick. In fact, they have lab tests that prove that! The TOTAL Nonstick System that is used on the pan outlasts all other bakeware nonstick, guaranteed! clean up all I had to do was wash the pans with mild dishwashing detergent and warm water.

Strawberry Peach Poke Cake
Ingredients
- 1 white or yellow cake mix
- 3 eggs
- I can peach slices, drained and reserved, chop peaches
- 1 cup peach liquid from drained peaches
- 1/3 cup oil
- 1 box strawberry jello, 4 serving size
- 1 c boiling water
- 1 container whipped topping
Instructions
- Preheat oven to 350 degrees. Prepare a 9 by 13 pan by spraying the sides with cooking spray.
- Drain the peaches, add enough water if needed to make 1 cup liquid.
- Pour cake mix into a mixing bowl and add eggs, oil, and the peach liquid.
- Beat on low for a minute or until blended, then beat two minutes on high.
- Pour the batter into the prepared pan and bake until a toothpick inserted in the cake comes out clean.
- Remove from oven and cool 20 minutes.
- Bring one cup of water to a boil. Add jello and stir until dissolved. Poke holes into the cake and pour the jello into the holes. Let cool completely for 60 minutes.
- When serving, top with whipped topping and chopped peaches.
Notes:
I made the cake in a springform pan. Leave the cake in the pan when pouring the jello over the holes. Place the pan on top of foil in case the pan would leak.

Love this! Peaches are a staple in my house, fresh (when in season) and canned so this will be one delicious cake to make.
