I love berries of all kinds and that's a good thing. Berries have the highest concentration of nutrients of all the summer fruits and so eat away. Like anything though, be mindful that berries do contain fructose. Moderation, people!!
I get asked a lot: what is the difference between a crisp and a cobbler? A crisp is a fruit dessert with a topping made of oats, flour, butter and sugar. The topping completely covers the fruit and is baked. A cobble is a fruit dessert baked with dollops of a biscuit-like topping and is baked. It looks like a cobbled street, hence its name.
What berries can you use?
You can use any seasonal berries. Keep in mind that some of the more tart berries, like gooseberries, might need more sugar to make them palatable. Strawberries, blueberries, blackberries, raspberries can be used interchangeably. Any combination of these will be delicious. You can even use frozen berries, but I suggest you thaw them and drain off some of the juices before baking.
What kind of sweeteners can you use?
I suggest sticking with regular sugar, or, use a substitute that measures like sugar. I don't recommend using a liquid sweetener like honey or corn syrup as they make the pies runny. That's been my experience, but if you have a different idea, please share!
What other toppings might I use?
The oatmeal topping is traditional, but my grandmothers often used leftover pie crust dough that they cut into small circles or shapes like leaves. They'd brush the crust with beaten egg or milk to give it a more golden color.
If there are leftovers, how do I store them?
You can store the crisp covered, on the countertop for up to two days. If you think you won't eat it all in two days, cover it with plastic wrap and store it in the refrigerator.

Berry Crisp
Ingredients
- 3/4 cup flour
- 1/4 cup sugar
- 1/2 cup brown sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup cold butter cut into small cubes
- 1/2 cup oats
- 1 cup blueberries
- 1 cup cut up strawberries
- 1 cup blackberries
- 1 Tablespoon cornstarch
- 1/4 cup sugar
Instructions
- Preheat oven to 375.
- Get out eight ramekins and butter the inside.
- Make the topping by combining flour, oats, brown sugar, sugar, cinnamon and salt. Add in butter and using your fingers, break up the butter with the mixture until butter is the size of small peas.
- Rinse berries, shake excess water off. Combine cornstarch and and sugar. Place berries in a bowl, then add cornstarch mixture and combine.
- Divide berries between the ramekins. Top with the oatmeal mixture.
- Bake for 20 minutes or until the top is browned and berries are bubbling. Let rest for 10 minutes, served with sweetened cream or ice cream.
