Welcome back to #SummerGamesWeek! Today I am going to share a little about the St. Lucia Olympic team and a traditional St. Lucian breakfast with a little twist.
Cocoa tea, not really "tea" so to speak, is a traditional breakfast in St. Lucia. St. Lucia is known for its locally grown cocoa. It's not a thick and creamy hot cocoa but a warm concoction that you will love for its chocolatey goodness. In St. Lucia, you would purchase a "stick" of cocoa that you would shave into the pot. If you are in the USA, you could use raw cocoa powder.
St. Lucia's Olympic Team
St. Lucia started sending athletes to the Olympics in 1996. They only compete in the Summer games, and have never brought home a medal. They are expected to compete in Athletics, Sailing and Swimming. The team consists of Levern Spencer, high jump, her fourth appearance, Stephanie Deveau-Lovell and Luc Chevrier, sailing, Maikili Charlemagne, swimming, 50 meter freestyle and Jean Luc Zephir, 100 meter freestyle. This rounds out the team. Best wishes for bringing home a medal!
How to make air fryer biscuits
Remove the refrigerated biscuits from the can.Place the biscuits in the basket or tray of your fryer.
Air Fry biscuits at 330F/165C for 9-10 minutes.
Carefully remove the biscuits and serve with jam or gravy. Enjoy!

Cocoa Tea
Ingredients
- 2 cups of water
- ½ cup of grated cocoa
- ¼ teaspoon of cinnamon
- ½ teaspoon of vanilla
- 1 cup of milk
- Sugar to sweeten
Instructions
- Pour 2 cups of water, grated cocoa, cinnamon, and vanilla in a pot and bring to boil. Let it boil for a few minutes.
- Then add milk and stir. Add the sugar to sweeten. Strain and serve.

When in Granada they sold cocoa balls to make their "tea". Great idea using the air fryer for the biscuits.

ReplyDeleteI've never air fried biscuits before, but now that I have, this is the only way to eat them! These were so flaky and delicious! I like to pair these with a sweet strawberry jam for a good breakfast snack.
