This month for Wine Pairing Weekend our host Linda from My Full Wine Glass challenged us to think of foods that are hard to pair with wines. As someone who likes wine, this was hard for me to imagine, so I went to my Facebook page and asked my friends for their suggestions. My friend Don suggested Ramen and now here we are!
Now, knowing Don, he may have meant the ramen that comes with the seasoning packet but I have always wanted to take on a homemade ramen dish, so this seemed to be the perfect time to do that, so here we go!
So let's talk about wine choices. Our top pick was this Magna Terra Pinot Noir. First, it is a terrific value for a delicious wine at around $8 a bottle. It's seriously good. It's bright and juicy with a fruit-forward flavor of strawberry and cherry, medium-bodied, and a nice finish with spice. It was delightful with the ramen, especially when you consider this is a dish made with value in mind. Our second choice would have been a Sauvignon Blanc, but since this one was so good, we didn't actually open a bottle to compare.

First, this isn't complicated, but there are a lot of steps. You will be busy the whole time in the kitchen, but it only takes about 30 minutes total. And then, it is totally, unapologetically delicious!
Easy Chicken Ramen
Ingredients
- 4 packages Ramen Noodles
- 1 tablespoon oil (we used sesame oil)
- 1 green onion, sliced on the diagonal
- handful of green peas, strings removed
- 4 cloves garlic, minced
- 1 tablespoon chili garlic sauce
- 1 tablespoon fish sauce
- 1/2 cup soy sauce
- 1/4 cup rice vinegar
- 1 lb cooked chicken breast, shredded
- 4 cups homemade chicken broth
- 1 cup water
- 4 eggs
- a few leaves of cilantro
- 4 lime wedges
- sesame seeds
Instructions
- Make an ice bath for the eggs by filling a bowl with ice and water.
- Bring a pot of water to a boil (enough to cover the eggs) and when boiling, drop the eggs gently into the water and cook 7 minutes. Remove from pot and place the eggs into the ice bath. Leave in the ice for 3 minutes. Remove and peel. Place eggs in a bowl and sprinkle them with some rice vinegar and soy sauce. Set aside.
- Bring another pot of water to a boil. Add noodles and cook to package directions. Strain, rinse in cold water and toss them with some oil to keep from sticking.
- In a Dutch oven, heat on medium heat. Saute the onion in some oil for about 5 minutes. Add the garlic. Stir and cook until the garlic is fragrant, then immediately add the water and chicken broth. Stir. Add in the soy sauce, rice vinegar, fish sauce, chili garlic paste and stir. Bring to a simmer.
- Add the chicken and simmer until the chicken is heated through, about 15 minutes.
- In a bowl, add a serving of noodles, pour the soup on top with some chicken, broth and veggies. Top with an egg cut lengthwise. Sprinkle on some sesame seeds, cilantro and more of the green onion. Squeeze the juice of the lime wedge on top. Serve.
Notes:
This is delicious with added veggies such as carrots and mushrooms.
Add some heat with sriracha sauce to taste.
