Rocky Road No Bakes

 It's time for June's Taste Creations and we are featuring recipes with that delicious combination of marshmallow, nuts, and chocolate lovingly known as Rocky Road.  




According to Wikipedia, the flavor was invented in 1929 when William Dreyer (of ice cream fame) cut up marshmallows using his wife's favorite scissors and added them to an ice cream base of chocolate and walnuts.  A chemical engineer for the ice cream company figured out a way to blend the ingredients so that the pieces remained mixed instead of sinking to the bottom.




My Rocky Road No Bakes pay homage to the original flavors of walnut, chocolate, and marshmallow, but I have put them together in a brownie/fudge-like dish that does not require any kind of baking.  It is delicious and decadent, so a little goes a long way!

Rocky Road No Bakes

Rocky Road No Bakes

Easy treat that keeps the kitchen cool.

Ingredients

  • 2 cups dark chocolate morsels
  • 1 T peanut butter
  • 1/2 cup marshmallow cream
  • 1/2 cup of your favorite nuts

Instructions

  1. Line a 8 by 8" square pan with parchment paper.
  2. In a large glass bowl, melt the dark chocolate and the peanut butter together.  
  3. Stir until smooth.  
  4. Add in nuts, stir until coated.
  5. Pour into a parchment paper lined pan.
  6. Scoop teaspoonsful of marshmallow cream onto warm no bakes.  Swirl throughout the mixture.
  7. Place in refrigerator until firm.  Cut into squares.

Notes:

Wad up the parchment paper before placing it in the square pan.

Can use milk chocolate morsels.
