Mojitos are originally from Cuba and are a refreshing cocktail for hot summer days. The idea for this cocktail was born from my two favorite summer drinks: mojitos and lemonade. I used a grilled lime in this Rita cocktail and it was delicious!
Mint can be expensive if you are purchasing it from the grocery store, so one thing my husband and I like to do is plant several mint plants in a big pot. Mint is easy to grow, in fact, so easy that you don't want to put it directly into the ground. It can easily take over space in very little time. There are all kinds of mint, but we typically use Clean Mint for our cocktails. In the past, we have planted spearmint, peppermint, chocolate mint, lemon mint, and orange mint and love them all!

Grilled Lemon Mojito
Grilling the lemon for this mojito intensifies the flavor.

Ingredients
- 2 teaspoons sugar
- 10 mint leaves
- 3 oz diet club soda
- 1 lime
- 2 oz white rum
- 2 slices of lemon, about 1/3" thick
Instructions
- Heat the grill to high.
- Place lemon slices on grill and cook until lemons are golden brown and caramelized.
- In a tall glass, add sugar, cut up lime, mint, and a splash of the soda.
- Muddle until the mint leaves are fairly broken down.
- Add one slice of lemon and muddle gently.
- Add rum, stir, add the rest of the soda.
- Garnish with a grilled lemon slice.
