Welcome to February's Taste Creations, where we are sharing with you our favorite pink foods, just in time for Valentine's Day! I made for you this Small Batch Pink Strawberry Ice Cream. Why small batch? Because this recipe is decadent and made for a special occasion. Making just enough keeps it being very special!
I adore ice cream and I want it to be of the very best. If I keep good ice cream at home, I will eat it every night, because I don't have a lot of self-control around it. I have learned that buying it in small batches means that I will be able to have a small amount without a bunch of leftovers tempting me.
This small-batch ice cream is similar to soft-serve ice cream in texture. Stirring it during the freezing process keeps the ice crystals from forming and making it hard. The creamy and delicious flavor is a bit like cheesecake with its tangy flavor.
Small Batch Pink Strawberry Ice Cream
Ingredients
- 1/2 c sweetened condensed milk
- 1/2 c half and half
- 5 large ripe strawberries
- 2-3 drops red food coloring
Instructions
- Rough chop strawberries, removing stem.
- Place all ingredients into a blender.
- Blend until mixture doubles in volume and strawberries are pureed.
- Pour into a freezer safe container.
- Freeze for an hour, stir.
- Stir every hour until ready to serve.

I absolutely LOVE homemade strawberry ice cream because it actually tastes like strawberries (unlike store bought). A small batch is a great idea for me, too. ;-)
