Welcome to the 2021 Edition of Taste Creations! This is our fourth year and I cannot be more pleased with the bloggers that make up this small and wonderful group of bloggers! This month we are sharing delicious soups with you, and particularly I will be showing you how to make a delicious Breakfast Soup.
This breakfast soup is made with potatoes and creates a delicious, creamy base for a poached egg and crispy fried bacon! The soup is delicious on its own, but add a poached (or fried!) egg and it goes over the top! A beautiful and tasty dish, especially nice for a later, brunch-like meal.

Potato and Onion Breakfast Soup with Egg and Bacon
Ingredients
- 2 lb russet potatoes, cut in chunks
- 1 medium onion, chopped
- 1 c whole milk
- 1 c chicken broth
- 1 c heavy cream or half and half
- 2 T butter
- 1 T minced garlic
- 4 poached eggs
- 4 slices bacon, fried and chopped
- salt and pepper to taste
Instructions
- Place the potato and onion in a soup pot. Add water to cover the vegetables. Bring to a boil.
- Cook for 20 minutes, or until vegetables are fork tender.
- Drain, return vegetables to the hot pot. Let sit for one minute.
- Add cream, milk and chicken stock. Bring to a boil. Add butter and garlic. Cook for 5 minutes.
- Using an immersion blender, blend the soup until creamy. Add salt and pepper to taste.
- To serve: Add 1 c of soup to a bowl. Top with chopped bacon and one of the poached eggs. Garnish with more pepper. Serve hot.
