The recipe we have been using lately for Cashew Chicken comes from gnom-gnom.com. We use it because the recipe has alternative ingredients for the sauces, which keeps them relatively low carb and sugar-free. If you are looking for a similar experience, we highly recommend their recipes.
For example, instead of sugar-laden oyster sauce, the recipe uses coconut aminos, fish sauce, and some ginger. My husband loves making this quick dish for a weekday dinner. He substitutes caulirice for the regular white rice.
The wine we chose is called Keuka Spring Riesling. Tasting notes: Aromas and flavors of peach and apricot leap to the senses with our luscious Semi-Sweet Riesling. Abundant natural tartness beautifully balances the sweetness of the finish. The 2018 we show here is sold out, but 2019 is still available from their website. The grape is grown in the Finger Lakes wine area in New York. More about these wines can be found here.
