Shortbread is just a simple cookie from Scotland made with this combination: 1 part sugar, to 2 parts butter and 3 parts flour. The cookie is buttery and delicious, perfect with your cup of hot chocolate or eggnog for holiday cheer. Traditionally the cookies are somewhat small.

Strawberry Jam Thumbprint Shortbread Cookies
Ingredients
- 1 cup unsalted Kerrygold butter, softened
- 1/2 cup sugar
- 2 cups all-purpose flour
- 1/2 c strawberry jam
Instructions
- Preheat oven to 350.
- Beat butter and sugar.
- Add in flour, 1/2 c at a time and beat thoroughly.
- Chill dough for 15 minutes before using to firm up the butter.
- Scoop 1 T of dough onto a cookie sheet prepared with a silicone liner or spread with butter.
- Using a spoon or your thumb, press the cookie dough to make an indentation.
- Fill the indentation with jam.
- Bake 10-12 minutes or until bottom is golden brown.
- Rest on pan for one minute, then remove to a cookie rack to cool completely.

ReplyDeleteI absolutely LOVE jam thumbprint cookies! There's just something about how the jam bakes into a slightly chewy filling that I can't get enough of. And yet I never make them my myself. I definitely need to change that this Christmas!
