My favorite part of the upcoming holiday meals is all the side dishes, so welcome to side dish heaven! This week I and a few other bloggers will be sharing side dishes that will have you swooning! I am pleased to share this Holiday Side Salad with you.
This salad is so good for you! Dark green leafy greens, dried cranberries, two kinds of cheese, and seeds galore, it is packed full of nutrients that will please even the most stringent of your guests. Leave the cheese off for a great vegan salad.
I never dress this salad until the last minute. Sometimes I just put the dressing on the side, so that it is the most crispy of all. The sweet onion dressing is the perfect complement to this salad, too. If you don't wish to make the dressing, there are a lot of good prepared sweet onion dressings available at your supermarket.
Holiday Side Salad
Ingredients
- 2 c chopped green cabbage
- 1 c chopped kale
- 1 c red cabbage
- 1 c green leaf lettuce
- 1/2 c slivered carrots
- 1/2 c shredded parmesan cheese
- 1/4 c edamame seeds
- 1/4 c sunflower seeds
- 1/4 c dried cranberries
- 4 oz chopped
- 1 cup sugar
- 1 cup vinegar
- 1/2 cup vegetable oil
- 1/4 cup chopped onion
- 1/2 teaspoons salt
- 1/4 teaspoon paprika
- 1/4 teaspoon ground mustard
- Dash pepper
Instructions
- Toss all ingredients together in a large salad bowl.
- Top with vinaigrette right before serving.
- In a jar with a tight-fitting lid, combine the first eight ingredients; shake well. Refrigerate until serving.
