Butterscotch Pear Bread Pudding #FamilyBakingChallenge

Thank you to Melissa's Produce for sponsoring the first #FamilyBakingChallenge!  Bloggers were invited to participate and given a basket of goodies for agreeing to make two of six possible recipes for this challenge.  I selected to make this Butterscotch Pear Bread Pudding first, as those pears looked totally luscious and ready to eat!

According to the website, a Butterscotch Pear is "directly imported from the fields of South Korea, Melissa’s Butterscotch™ Pears are the most refreshing pears you’ll ever bite into. Grown with meticulous care and hand-wrapped to preserve moisture, these perfect, blemish-free fruits are gorgeous, plump, and crisp.



Melissa's Butterscotch™ Pears are prized for their large size and paper-thin skins, which lack the bitter flavor of other varieties. Enjoy these delectable Korean treasures straight out of hand or sliced into salads, desserts, slaws, and compotes."

This description is very accurate!  The fruit is delectable as a hand fruit, but it baked beautifully in this Butterscotch Pear Bread Pudding.  The fruit didn't need to be peeled as the skins are thin and with no bitter taste.  The skins cooked nicely in the pan, too, carmelizing with a deep golden color.



The recipe for this dish can be found here.  I made a few modifications to the recipe.  First, I only wanted 4 servings, so I used one pear, cut in half for the top of the two ramekins.  I used 3 cups of bread cubes.  For the custard I used 1/2 c almond milk, 2 cups heavy cream and 2 eggs.  The rest of the recipe was as indicated.  I baked for 50 minutes.


This would make a beautiful and elegant Christmas dessert, baked as originally directed.  If you make this, tag me using #ourgoodliferecipes and I will comment on your post!
