Chocolate is the star all this week, and today I am sharing with you the recipe for Chocolate Chaffles.  What is a chaffle, you ask?  That's a great question, and I will share more about that after I tell you about the giveaway!

So, what is a chaffle?  It is a combination of cheese, egg, and almond flour that is cooked in a mini waffle maker.  I use this one from Amazon to make my chaffles. Please note that if you order the waffle maker from me, I get a commission from Amazon!  The cheese makes it crispy and the egg and almond flour combination make it bread-like.  Chaffles are used for hamburger buns, breakfast, and dessert!  It all depends on what you add to the ingredient list!

These chocolate chaffles are a perfect low carb dessert.  Please note:  The carb count on the recipe includes the whole batch of the cream cheese topping.  I only use a small portion of the topping, just for taste.

Chocolate Chaffles with Cream Cheese Topping

Believe it or not, these make a delicious dessert!

Ingredients

  • For the Chaffle
  • 3/4 c shredded mozzarella cheese
  • 1 egg (or 3 T eggbeaters)
  • 2 T almond flour
  • 1 1/2 T cocoa powder
  • 1/4 t baking powder
  • For the Cream Cheese Topping
  • 4 oz cream cheese, room temp
  • 1/2 c powdered erythritol
  • 1 t vanilla
  • 1 T heavy cream

Instructions

  1. Preheat your waffle iron until hot.
  2. Combine all the ingredients in a small measuring cup with a pourable spout.
  3. Pour 1/4 of the batter into the waffle maker
  4. Cook for 3 minutes or until crispy.
  5. Remove the chaffle and cool on a wire rack.  Repeat until batter is finished.
  6. To make the cream cheese topping:
  7. Beat cream cheese until fluffy.  
  8. Add in the vanilla and erythritol and beat thoroughly.
  9. Add cream and beat until incorporated.
  10. Spread on cooled chaffles as desired.
