Today is the last day of the 2020 #PumpkinWeek. I plan all year and then it goes by in a snap! I have saved the best for last: Pumpkin BACON Mac and Cheese! This dish was delicious and would be a wonderful side dish for your Thanksgiving meal, or just a wonderful fall dinner!
I roasted butternut squash and Brussels sprouts and used them as a garnish with the bacon. It was so good and definitely made the start of fall very special. I will be making this again and again, I am sure. I cannot wait for my daughter to try it, as she loves all things pumpkin. (just like her momma!)

Pumpkin Bacon Mac and Cheese
A special macaroni and cheese, perfect for the Autumn table.
Prep time: 15 MinCook time: 25 MinTotal time: 40 Min
Ingredients:
- 16 oz whole wheat pasta
- 2 T butter
- 2 T flour
- 1 1/2 c whole milk
- 15 oz pumpkin
- 1 t garlic
- 1 t dry mustard
- 1/4 t cayenne pepper
- 1/4 t white pepper
- 1/4 c diced onion
- 6 slices bacon
- 1/4 t nutmeg
- 1 c grated parmesan
- 3 c grated cheese
- 2/3 c chicken broth
Instructions:
- Cook pasta according to package directions.
- In the meanwhile, cook bacon to crispy, drain on paper towels.
- In a large pot, melt butter and cook onions.
- Add flour, whisk and cook until flour is browned.
- Add in milk and vegetable broth, whisking until smooth.
- Add spices and pumpkin and stir.
- Add cheeses and melt.
- Add pasta, stir gently to coat.
- Chop bacon.
- Serve with a sprinkling of chopped bacon on top.
