I chose to feature a spumante sparkling Rosato called Foss Marai Roos Brut Vino Supmante Rosato. I chose it because it came in these adorable small bottles that I thought would be a pretty table setting. I was right. Sooo cute!

For us, the wine was a bit overly sweet, with a strong wild cherry flavor. The "sparkling" was not very sparkling, but that could have been the bottle size issue. It did go very well with our pairing of Rotisserie Chicken Flatbread, however, and at the end, we tried it as a dessert, can't wait to share that with you!
Our flatbread was made with sour cream as the "sauce" which with the sweetness of the wine, made a wonderful counterbalance. The red onions and bacon also paired well, as did the delicious rotisserie chicken.

Rotisserie Chicken Flatbread

A quick and delicious weeknight meal.
Ingredients:
- 2 pieces garlic naan bread
- 2 slices of bacon, chopped, slightly cooked
- 1/4 red onion, sliced
- 1 c cherry tomatoes, quartered
- 1/2 c fresh mozzarella, sliced
- 6 -8 fresh basil leaves
- 1/2 c sour cream
- 1 c shredded chicken
Instructions:
- Preheat oven to 400.
- Divide sour cream between the two naan, spread over the entire top.
- Lay down mozerella slices on both pieces of naan.
- Add chicken, bacon, tomatoes and red onion.
- Bake for 7 minutes or until cheese is melted and bubbly.
- Remove from oven. Let sit 3 minutes.
- Chop basil and sprinkle on top.

Our best surprise though, was to take the leftover wine and pour it over real vanilla ice cream. This Rosato Float was delicious and so fun! I used my smallest scoop, about the size of a melon baller, and dropped the ice cream into the wine. I poured the rest of the wine over the ice cream. Using the straw, I stirred a couple of times and then drank the liquid and used a spoon to get the ice cream. Delicious.
Wine floats?! You are fabulous. And that flatbread looks delicious. I can't wait to try it.
