When I was little my dad made a BBQ pit from concrete blocks and steel rods. He was a welder and had access to those scrap rods and could cut them to size. He cooked all kinds of things on that grill and I truly believe that is where my love of the grill came from.
Thankfully, my husband grew up with a grilling dad, too. His dad made fabulous steaks and even though they were well done, they were juicy and delicious. When we purchased our first home we made sure there was a great place to set up a BBQ spot!
Bob now owns a Big Green Egg, which is a smoker. We often grill our meat and then put it in the smoker for a long, slow smoke. That's what we did with the pork butt that was the basis for these tacos. Bob watched over it for around 10 hours.
We always enjoy much of the smoked pork butt the first night but we always save a pound to make these delicious tacos. The smoke and the tomatillo sauce make a fabulous pairing, and it makes for a quick and easy weeknight dinner. I'll share the slaw recipe on Wednesday, so be sure to come back!

Smoked Pork Butt Tacos

A fabulous way to use leftover smoked pork butt.
Ingredients:
- 1 lb shredded smoked pork butt
- 1 T oil
- 1 onion, sliced
- 1 pepper, sliced
- 4 large mushrooms, sliced
- 1 c tomatillo sauce
- 1 tomato, chopped
- 1/2 c prepared slaw
Instructions:
- In a large skillet, heat oil and add in shredded pork.
- Add in vegetables and cook until soft.
- Add in tomatillo sauce and cook until sauce coats the meat.
- Heat tortillas in the microwave for 30 seconds.
- Top each tortilla with shredded pork and 1-2 T of slaw.
- Serve
