The most interesting thing about having a hobby such as wine is that you never know it all. Wine has a way of expanding and growing while the world turns. So, when I am invited to do a wine event with a winery like Yarden Wines, I jump at the chance to connect and learn more about this lovely thing called wine.
Our group, called #WinePairingWeekend, was fortunate to be asked to do an event with Yarden Wines. Each of us received two bottles, to taste and pair their latest vintages. Yarden Wines is composed of both Golan Heights Winery and Galil Mountain Winery, which are imported to the U.S. by Yarden Wine Imports. The wines are made with great care for the environment, capturing the best of their terroir.
I received two bottles from Yarden Wines: a Gilgal Sauvignon Blanc 2019 and a Galil Cabernet Sauvignon 2018. We will talk about the Cabernet Sauvignon in another post.
Winemaking has been happening in Israel for thousands of years. Israel's latitude is as far south as you can go for grape growing and in high altitude, thus experiencing cooler overall temperatures.

For my palette, I tasted melon and light florals. It isn't at all sweet, though, it is refreshing like lemon and lime.

What we decided to pair with this wine is a Mahi Mahi fish. We love this lean fish for its slightly sweet flavor and large flakes. We made a pineapple salsa to top it with, and that's the recipe I am going to share with you!
Pineapple Salsa

A light and tasty topping for any fish!
Ingredients:
- 1/2 c pineapple chunks (fresh is best)
- 1/2 c canteloupe chunks
- 1/4 c red onion, chopped fine
- 1 T minced cilantro
- 1 T olive oil
- salt and pepper to taste
Instructions:
- Mix all ingredients together well.
- Let sit on the counter for 15 minutes.
- Refrigerate after 15 minutes.
- Top cooked fish with 2 T of salsa.
Notes:
Any melon can substitute for the canteloupe.

Mahi Mahi with pineapple salsa is one of the dishes I had to make for my exams in cooking school! Great choice with the sav blanc too. :)
