Baked Brie is the star of any cheese board, and with no wonder... it is comforting, warm and delicious. It looks amazing and it doesn't take any effort to make. It is the perfect dish to go with a Cremant de Bordeaux, especially a rose one, with the hint of red berries to add to the honey of the dish.
Cremant de Bordeaux is made from typical Bordeaux grapes produced in the traditional method where the second fermentation happens in the bottle. It's the name of all sparkling wines produced in the Bordeaux region using that method. Even though Bordeaux winemakers have been producing sparkling wines since the 1800s, it wasn't until 1990 that Cremant de Bordeaux became an official appellation. Cremant is French for creamy. All the grapes used in a sparkling wine must be picked by hand and the wine aged for twelve months. All to make this very special drink.
Let's talk about this wine! We chose this Jaillant Cremant de Bordeaux for its beautiful pink color and its reasonable price tag (under $20!) You first experience the bouquet of red fruit and a bit of lavender (not too much, because the wine is actually on the dry side.) The bubbles are explosive and celebratory. The grape is Merlot, and absolutely wonderful vanilla on the finish. I think the vanilla at the end is what makes it go so well with this baked brie dish.
