Happy 20th wedding anniversary to my blogger friend, Camilla from Culinary Adventures with Camilla. To celebrate, we are going to be all excited about cheesecake, because that is what Cam served at her wedding to her guests: wedding cheesecake!
Before we get to all of that, though, I thought you might want to learn a little bit about Camilla's romance with her husband. Here are some questions I asked her. Enjoy reading!
We met on the doorstep of a mutual friend's house. He was trying to come in for a snack (during a break from school or work) and I was babysitting the friend's kids. So, I didn't let him in immediately because I had no idea who he was.
Was it love at first sight?
Pretty much! (I'd say definitely YES since I am privy to information here!)
What was your favorite thing to do while courting?
Adventure! Every weekend we hit the road and went somewhere new.
Did you have a favorite meal or dish that you liked to do together?
He cooked for me once. And I made the mistake of heckling him. But, he served me hamburger helper and canned green beans. He hasn't set foot in the first in twenty-two years. One of the first dishes I made for him that became a favorite was halibut on top of lentils topped with caramelized onions.
Where did you get married? Did you have a large or small wedding?
We got married in the chapel at the high school I attended since neither of us went to church at the time. We had 100 people at our wedding and that was his huge family, my huge family, and some friends.
What is your favorite memory of your wedding?
So many things though that entire day was a blur. Highlights: toasting my best (Danish) best friend in Italian since she and I had met while we were both working in Italy. Doing the tango that we had choreographed and practiced for weeks. Having a friend spill red wine down the back of my dress. I know that sounds like it would NOT be a happy memory, but that friend has since died and that memory still makes us laugh and laugh to remember. And - probably my favorite moment - winning the limbo in my wedding dress!
What a wonderful beginning to this marriage that has stood the test of twenty years! Congratulations, my friend!

Keto Vanilla Cheesecake

Make this in an 8 x 8 pan or make it in individual cupcakes as we did!
Ingredients:
- 8 oz cream cheese
- 1 c yogurt
- 1/2 t pure vanilla extract
- 1 T lemon juice
- 1/3 c erythritol
- 1/2 c almond flour
- 1/4 t salt
- 3 T melted grass-fed butter
Instructions:
How to cook Keto Vanilla Cheesecake
- Make the crust by combining the almond flour, salt, and melted butter. Drop 1 T into each muffin cup liner. Pack down firmly.
- Preheat oven to 350F.
- Bring cream cheese to room temp, then beat cream cheese, flavorings, yogurt, and sugar together. Scoop 2 T of the batter on top of the crust. Place in the middle rack of your oven and make 20 minutes undisturbed. Do not open the oven. When the 20 minutes are over, turn off the oven and bake 5 minutes more. Remove from oven and cool 20 minutes. Store in refrigerator. The cheesecakes does freeze well!
