Healthy Homemade Sloppy Joes

Happy National Sloppy Joe Day! I love sloppy joes and have ever since my mom introduced me to the Manwich in the 70s. I really loved that sandwich and we ate a lot of them in our day. Now, my husband and I are watching the amount of sugar and the amount of fat in our diet, so we created a new and healthier version of the sloppy joe.

First, we added some hidden vegetables. We love the flavor and the bulk the vegetables add to the meat. We use this same trick on our meatloaf and meatballs. All are amazing and delicious! The tomato sauce, along with the carrots, provides enough sweetness that we totally love. We also serve it open-faced on good wheat bread and cut it with a knife and fork.
