A slow cooker isn't needed as the use of some of convenience foods makes this a quick meal for even a weekday meal. It's warm and filling. Confession: I use leftover ham when I can to make this soup but when I can't I look for packaged precut ham in my grocery store. Homemade Ham and Bean Soup
Homemade soup with the convenience of canned beans. Delicious!
prep time: 7 Mcook time: 20 Mtotal time: 27 M
ingredients:
- 2 medium carrots, sliced
- 2 celery ribs, chopped
- 1/2 cup chopped onion
- 2 tablespoons butter
- 4 cans (15-1/2 ounces each) great northern beans, rinsed and drained
- 4 cups chicken broth
- 2 cups cubed fully cooked ham
- 1 teaspoon chili powder
- 1/2 teaspoon minced garlic
- 1/4 teaspoon pepper
- 1 bay leaf
instructions:
How to cook Homemade Ham and Bean Soup
- In a large saucepan, saute the carrots, celery and onion in butter until tender.
- Stir in the remaining ingredients.
- Bring to a boil.
- Reduce heat and cook for 10-20 minutes, or until vegetables are tender.
- Discard bay leaf.
- Serve hot.
NOTES:
Rinse beans to reduce sodium content.
