Quick Homemade Ham and Bean Soup

We are deep into the winter months and nothing is more cozy and delicious than a hearty homemade soup.  I love this soup, Quick Homemade Ham and Bean Soup, and especially when it is served with homemade cornbread and sweet honey butter.  You can whip this up in a hot minute and serve right away.  The best part: it is even better on Day 2!



A slow cooker isn't needed as the use of some of convenience foods makes this a quick meal for even a weekday meal.  It's warm and filling.  Confession: I use leftover ham when I can to make this soup but when I can't I look for packaged precut ham in my grocery store.  Take a look at the other hearty and homemade soups made by bloggers just for this event.

Homemade Ham and Bean Soup

Homemade soup with the convenience of canned beans. Delicious!
prep time: 7 Mcook time: 20 Mtotal time: 27 M

ingredients:

  • 2 medium carrots, sliced
  • 2 celery ribs, chopped
  • 1/2 cup chopped onion
  • 2 tablespoons butter
  • 4 cans (15-1/2 ounces each) great northern beans, rinsed and drained
  • 4 cups chicken broth
  • 2 cups cubed fully cooked ham
  • 1 teaspoon chili powder
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon pepper
  • 1 bay leaf

instructions:

How to cook Homemade Ham and Bean Soup

  1. In a large saucepan, saute the carrots, celery and onion in butter until tender. 
  2. Stir in the remaining ingredients. 
  3. Bring to a boil. 
  4. Reduce heat and cook for 10-20 minutes, or until vegetables are tender.
  5. Discard bay leaf.
  6. Serve hot.

NOTES:

Rinse beans to reduce sodium content.
