Eggplant and Tomato Soup #soupswapday

My husband made this delicious soup for us last week and it will be a keeper for us.  Deep and delicious, this Eggplant and Tomato Soup only gets better and better over time. We added some roasted chicken to it to give it some protein and had it for dinner.

Eggplant and Tomato Soup

Eggplant and Tomato Soup

Eggplant and tomatoes have gone together for centuries, especially in Meditteranean cooking. Canned tomatoes are a great choice when fresh tomatoes are not at their prime.
prep time: 20 Mcook time: 20 Mtotal time: 40 M

ingredients:

  • 2 lbs eggplant, cubed and roasted
  • 6 T extra virgin olive oil
  • 1 medium onion chopped
  • 2 minced cloves of garlic
  • 1/2 t ground cumin
  • 1 1/ t cinnamon
  • 4 c chicken stock
  • 1 15 oz can of diced tomatoes
  • 1 bay leaf
  • 2 t lemon juice
  • 2 T slivered almonds
  • 2 T chopped cilantro

instructions:

How to cook Eggplant and Tomato Soup

  1. Heat 1 T olive oil in large sauce pan.
  2. Add onion, 3/4 t salt, 1/4 t pepper, and cook until softened.
  3. Stir in garlic and spices, and cook until fragrant.
  4. Stir in broth, tomatoes, bay leaf, and half the roasted eggplant.
  5. Bring to a simmer.
  6. Simmer until eggplant is softened, about 20 minutes.
  7. Discard bay leaf, 
  8. Working in batches, process soup in blender until smooth.
  9. Return soup to pot, add reserved eggplant, lemon juice and adjust seasonings. Heat until hot.
  10. Serve with slivered almond and chopped cilantro.
