To make my cranberry sauce, I boil a bag of cranberries with a cup of sugar and two tablespoons of water, and a pinch of salt, for 15 minutes. I love listening to cranberries pop, so this is one of my holiday pleasures! The sauce will seem thin when you are finished but it thickens up when it cools. You can do some fancy stuff with it, like add 2 T brandy instead of the water, or 2 T orange juice. Some people like cinnamon in theirs, and I know at least one person who puts salt and pepper in it. Mine is just the simple version.
Now to make the butter.

A delicious and easy way to use the leftover cranberry sauce from Thanksgiving. Delicious on toast, biscuits, and pancakes, or anything else that you want to give a little cranberry pizazz.

- 1/4 prepared cranberry sauce
- 8 oz softened butter

How to cook Cranberry Butter
- Whip the butter in a mixing bowl until butter is smooth.
- Add cranberry sauce and whip until combined.
- Place into a small bowl and refrigerate until set.
