For Day 2 of @ChristmasSweetsWeek, I made cupcakes from my most read post: Rustic Keto Vanilla Cake. I topped them with this marshmallow buttercream. What I added new were these darling little Christmas trees. They are simply stick pretzels with green white chocolate coating, melted, and drizzled back and forth like Christmas trees. I do think they add the cutest decoration to the top and they are quick and easy to make.
One trick I learned is this: Start the icing at about halfway up the pretzel stick. That will give you more room to insert the pretzel in the cupcake. The one on the bottom row, center, works very well!
