When you are mentioned in a Shakespearean play, you know you have hit the big time! Gingerbread has been around for a long, long while, maybe even as far back as the ancient Greeks and Egyptians. Crusaders brought the spice to their kings and at first, was a pretty hot commodity. As ginger became more available, gingerbread in the shape of cookies or cake became a household staple. My personal favorite story is how Queen Elizabeth I gave out gingerbread cookies made to look like her guests! I bet they were enchanted by the cookies.
And now back to our present day! We have ginger readily available and fairly inexpensively, so we can play and create new uses for the spice. When making this gingerbread hot cocoa, I chose to keep the traditional flavors of molasses and ginger. If you aren't a molasses fan, you can replace it with dark or light corn syrup in the same measurements.

Gingerbread Hot Cocoa
Warm, rich, and comforting, this is the perfect drink for a very chilly night.

ingredients:
- 4 c almond milk, unsweetened
- 1/4 c powdered cocoa
- 1/4 c brown sugar
- 1 T molasses
- 3/4 t cinnamon
- 3/4 t ground ginger
- 1/4 t ground allspice
- salt
- 1 t vanilla
- whipped topping for garnish if desired

How to cook Gingerbread Hot Cocoa
- In a medium saucepan, combine all ingredients EXCEPT the whipped cream. Only a dash of salt is needed.
- Cook and whisk over medium heat until hot.
- Remove from heat.
- Ladle into mugs and dollop on whipped cream.
