These pralines are pecan forward, with the "candy" part holding the pecans together. You can reduce the amount of pecans in the recipe, but then you will need to let the candy cool a little longer so that when you scoop up the pralines, it holds together a bit better.
It is very easy, requiring only the pan to roast the nuts on and a kettle to make the sauce. Easy clean up as well. The entire batch would make a wonderful gift for a colleague or a friend who is on keto.

Keto Pecan Pralines
Sugar-free but delicious candies. Easy to make and keto-approved.
prep time: 3 Mcook time: 25 Mtotal time: 28 M
ingredients:
- 1 c pecans, raw, pieces
- 1/4 c heavy whipping cream
- 1/4 c salted butter
- 1 1/2 T Swerve sweetener
- 1/2 t vanilla paste or extract.

How to cook Keto Pecan Pralines
- Preheat oven to 350.
- Roast pecans approx 10 minutes or until golden brown.
- In a small saucepan, combine butter and sweetener.
- Stir over medium heat until golden brown.
- Add cream and vanilla.
- Stir until golden brown again.
- Add pecans and stir thoroughly.
- Let cool for one minute.
- Using a medium scoop, scoop pralines onto parchment paper.
- Set in refrigerator to harden.
- Store in the refrigerator.
