Easy Keto Pralines

To all my brothers and sisters in keto, we cannot let the holidays be a point of failure, so stick to the plan. For me, cookies and candies are my downfall, so I found a way to make a delicious keto dessert that not only is keto-friendly but also makes a SMALL BATCH. This is super helpful because we need to be in control of our portions!



Easy Keto Pralines Recipe

These pralines are pecan forward, with the "candy" part of the candied pecans holding the pecans together. You can reduce the amount of pecans in the recipe too, but then you will need to let the candy cool a little longer so that when you scoop up the pralines, it holds together a bit better when fully set.



It is very easy, requiring only the pan to roast the nuts on and a kettle to make the sauce. Easy clean up as well. The entire batch would make a wonderful gift for a colleague or a friend who is on keto and craving traditional praline.

Ingredients
  • 1 cup unsalted butter
  • 1 cup heavy cream
  • 3/4 cup keto-friendly brown sugar substitute such as Swerve Brown or Lakanto Brown Sugar
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 cup chopped pecans (or your preferred nuts)

Instructions
  1. Put the baking sheet down to prevent sticking.

  2. In a medium saucepan, melt the butter over medium heat. Once the butter is melted, add in the heavy cream and your keto-friendly brown sugar. Stir consciously to combine, and bring the mixture to a gentle simmer. Let it cook for 5-7 minutes until it thickens slightly.

  3. Now it's time to add the flavor. Remove the pan from the heat. Stir in the vanilla extract and sea salt. Then, add the chopped pecans and mix well.

  4. Drop spoonfuls of the mixture onto the baking paper. You can shape them into clusters or little mounds depending on what you prefer. Make sure you give them time to cool at room temperature for 1-2 hours, or place them in the fridge to speed up the process if you're super excited to start munching!

  5. Once the pralines are set, they are ready for you to enjoy! If you have any leftovers, learn how to store them below. But the leftovers never last in this house!

How to Store Pecan Pralines

Although this keto pecan pralines recipe is small batch, if you want to make multiple batches and store them, you need to know how to store them. Follow the steps below to store them properly. Make now, enjoy later!

  • Let them cool completely: Before storing, let your pecan pralines cool completely on the baking sheet. This helps prevent any condensation, which could affect the texture and taste of your delicious keto dessert.
  • Use an airtight container: Once cooled, transfer your pralines into a quality airtight container. This will keep them fresh and prevent them from absorbing any yucky moisture or odors from other foods.
  • Room temperature storage: Pecan pralines can usually be safely stored at room temperature for up to a week. Just make sure they are kept in a cool, dry place away from any direct sunlight.
  • Refrigeration for longer storage: If you want to store them for a longer period of time, you can refrigerate your pecan pralines for up to three weeks. Make sure the container is sealed tightly to prevent the pralines from absorbing any of the moisture in the fridge.
  • Pop your dessert in the freezer: For even longer storage, you can freeze your pecan pralines. All you need to do is place them in a single layer on a baking sheet and freeze until solid. Then, transfer them to a freezer-safe bag or container. They can stay in the freezer for anywhere up to 3 months. Just make sure you thaw them at room temperature before enjoying them!
