When my husband was a principal in his school, he became very interested in cooking. He particularly liked making savory, main dish meals. He discovered encrusting meats and fish with nuts, and for a while there, everything he made was encrusted with nuts. His fellow administrators and office staff would always ask him what he was cooking that night, and then answer for him: encrusted (insert meat.) Even though they teased him about it, all wanted to try Bob's recipes!

Pecan Encrusted Pork Loin with Pineapple Brown Sugar Glaze
Sweet and savory, this dish is perfect for guests and for a meal at home.
prep time: 10 Mcook time: 20 Mtotal time: 30 M
ingredients:
- 1 1/2 to 2lb pork loin, trimmed
- salt and pepper
- 1/2 c brown sugar
- 2 T soy sauce
- 2 t minced garlic
- 1/2 c chopped pecans
- 1/4 c pineapple juice
- 2 T dijon mustard
instructions:
How to cook Pecan Encrusted Pork Loin with Pineapple Brown Sugar Glaze
- Preheat oven to 400.
- Place nonstick foil on a cookie sheet.
- Place rack on top of the foil.
- Salt and pepper pork loin.
- In a small bowl, stir 1/4 c brown sugar, 1 T of the soy sauce and all the garlic.
- Spread mixture on top of the pork loin.
- Press chopped pecans on top of the sugar mixture.
- Bake uncovered for 20 minutes.
- While pork is roasting, add 1/4 c brown sugar, 1 T soy sauce, all the pineapple sauce and all the mustard in a sauce pan.
- Bring mixture to a boil, then reduce to a simmer.
- Simmer for 3-5 minutes.
- Remove from heat.
- Remove pork from the oven, check temperature (145 degrees minimum).
- Let rest 5 minutes.
- Slice pork, spoon sauce on top and serve.
NOTES:
Double sauce for a larger pork loin and increase cooking time as needed.
