Pecan Encrusted Pork Loin with Pineapple Brown Sugar Glaze

October 22 is National Nut Day and a few of my friends and I are celebrating by bringing you a few fun recipes that include nuts. I am sharing with you Pecan Encrusted Pork Loin that my husband makes.

When my husband was a principal in his school, he became very interested in cooking. He particularly liked making savory, main dish meals. He discovered encrusting meats and fish with nuts, and for a while there, everything he made was encrusted with nuts. His fellow administrators and office staff would always ask him what he was cooking that night, and then answer for him: encrusted (insert meat.) Even though they teased him about it, all wanted to try Bob's recipes!
