About the chocolate chips. I am a firm believer that no one should decide for you how many chocolate chips should go into a cookie! I use the 1 cup measurement for nutritional information only. The amount of chocolate chips that go into a cookie is a decision that should be from the heart.
Some tips to consider: Brownie mixes come in different sizes. My 14.5 oz box makes 36 cookies when you use the small scoop. Do not overbake these cookies if you love a fudgy center. Overbaking leads to dry cookies. Be creative with your stir ins. Try peanut butter chips, white chocolate chips, mini chocolate chips, chopped Andes mints, chopped nuts, chopped Reese's cups... the more creative you are, the better!
Yield: 36 cookies
Brownie Cookies
Use a brownie mix as a shortcut to these deeply chocolate cookies.
prep time: 5 Mcook time: 8 Mtotal time: 13 M
ingredients:
- 1 brownie mix (14.5 oz)
- 2 eggs
- 1/4 c vegetable oil
- 1/4 c flour
- 1 c chocolate chips
instructions:
How to cook Brownie Cookies
- Preheat oven to 375.
- Line a cookie sheet with parchment or a silpat.
- Mix all ingredients together by hand until all ingredients are well blended.
- Using a small scoop, scoop dough onto covered cookie sheet. Don't smash the balls, leave them rounded.
- Bake from 5-8 minutes. DO NOT OVERBAKE.
- Cool, remove from cookie sheet and cool thoroughly.
NOTES:
Adjust the baking time for how chewy you want the cookie to be. Five minutes will give you a more liquidy center, 6-7 a chewy center and 7-10 minutes a drier, crispier cookie.
