Today I am sharing with you Pumpkin and Sausage Tacos. I love adding squashes to our tacos. So many of the fall squashes can hold up nicely in tacos. Pumpkin is easy to roast plus it will last in the refrigerator, so you can make it in advance. That means dinner will come together in a short amount of time! I know sometimes I need a quick dinner that is wholesome. This one fits the bill.

With leftovers, when there are some, I use the sausage mixture in scrambled eggs. It is so good, and delicious in a whole new way!

Pumpkin and Sausage Tacos

Delicious tacos made with roasted pumpkin.
prep time: 20 Mcook time: 1 hourtotal time: 1 H & 20 M

ingredients:

  • 1 pie pumpkin (small, about 6-8")
  • olive oil
  • salt and pepper
  • 1 lb sausage, mild
  • 1 small onion chopped
  • 1 T tajin
  • 1 small green pepper, chopped
  • 1 c roasted pumpkin cubes
  • 1 c shredded cheese (I use Cabot)
  • 8 tortillas
  • avocado
  • red onion
  • sour cream
  • cilantro
  • 1 lime cut into four wedges

instructions:

How to cook Pumpkin and Sausage Tacos

Roasting the Pumpkin
  1. This is a step you can do on the weekend to be ready for when you want to make the tacos.
  2. Preheat oven to 350 and line a cookie sheet with parchment or a silicone liner.
  3. Wash the outside of the pumpkin
  4. Cut in half, then into fourths.
  5. Clean out the seeds and throw away.
  6. Drizzle on olive oil.
  7. Salt and pepper the quarters.
  8. Place on cookie sheet.
  9. Roast for 30 minutes. Flesh should be firm but also a knife should be able to go cleanly into the pumpkin.
  10. Remove from oven.
  11. Cool.
  12. Slice off pumpkin skin.
  13. Chop into cubes.
  14. Refrigerate until ready to use.
Prepare the filling
  1. Crumble sausage into a large frying pan.
  2. Cook until sausage is slightly pink.
  3. Add onions and green peppers.
  4. Sprinkle on tajin.
  5. Cook until vegetables are softened.
  6. Add in 1 cup of the roasted pumpkin (more if you like!)
  7. Cook until pumpkin is heated through.
  8. Heat tortillas.
  9. Scoop filling onto tortillas.
  10. Add avocado, cilantro, cheese, sour cream, lime, red onion.

NOTES:

The cooking times include roasting the pumpkin.
