Mango Watermelon Salad
Cool and crisp salad with the gentle flavors of watermelon and mangoes.

ingredients:
- 1 small round watermelon, cubed
- 2 medium mangos, pitted, peeled and cubed
- 1/4 c freshly chopped cilantro
- 1/4 lime juice
- 1 T water
- 1 T honey
instructions:
How to cook Mango Watermelon Salad
- Put watermelon and mango in a large bowl.
- Whisk together the lime juice, honey and water.
- Pour dressing over fruit and gently toss.
- Sprinkle on cilantro.
- Let flavors mingle in refrigerator for 30 minutes.

ReplyDeleteI wish that I enjoyed mango but it wasn't what I expected when I tried it. However, I wouldn't mind substituting the mango for kiwi or strawberries, or combo of fruits with the watermelon. I love eating fresh fruit during the summer time.

Mango watermelon salad sounds like a delightful idea to have on a hot and humid day. We are going to get hit with hot and humidity this week, so perhaps I will whip this up for the family this week.
