Stone fruit is any fruit that has a pit, or "stone" in the center of it. My favorites and the highlights for the week are peaches, cheeses, and mangoes. I wrote about peaches here yesterday, so I won't repeat much except to say that I am partial to Calhoun County, Illinois, peaches. Each fruit has its own unique way to pit it. I described how to pit peaches in the post above, so let's talk about cherries.

To pit a mango, that's a really different process. Find the center of the mango and run a knife horizontally around it. Remove the top part of the mango, cut around the pit in the bottom half and slide it out.
I will tell you that this is not the traditional way to remove the pit from a mango but it sure works for me!

Peach Daiquiri
Fresh peaches are so sweet that you need only a little sugar to make these stand out.

ingredients:
- 3 small peaches, pits removed, and sliced
- 1 T fresh lime juice
- 1/4 c sugar
- 4 oz of rum (or more if you like your drinks stronger)
- 3 c ice
- 4 small slices of peach
- 4 mint leaves
instructions:
How to cook Peach Daiquiri
- In your blender layer ingredients: ice, peaches, sugar, rum.
- Run blender until all ingredients are blended and resemble ice cream.
- Pour into glasses, garnish with mint and a peach slice
